  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 limes, juiced
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine black beans, cherry tomatoes, corn, red bell pepper, red onion, and cilantro.
  6. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  7. Add cooled quinoa to the vegetable mixture.
  8. Pour the dressing over the quinoa salad and toss to combine.
  9. Refrigerate for at least 30 minutes before serving.
