Sweet Potato Taco Bowl

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups cooked quinoa
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes.
  3. Toss sweet potatoes with olive oil, cumin, chili powder, salt, and pepper on a baking sheet.
  4. Bake for 25-30 minutes until tender.
  5. In a large bowl, combine cooked quinoa, black beans, corn, and roasted sweet potatoes.
