  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced

  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck until browned on all sides.
  2. Transfer the beef to the slow cooker. Add onion, garlic, carrots, celery, crushed tomatoes, tomato paste, red wine, oregano, salt, and pepper.
  3. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  4. Shred the beef with two forks and stir in fresh basil before serving.
