  • 1 pound grilled chicken, diced
  • 1 cup corn, roasted
  • 1/2 cup cotija cheese, crumbled

  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a pot, bring water to a boil and add the rice. Cover and simmer according to package instructions.
  2. In a large skillet, combine the grilled chicken, roasted corn, lime juice, chili powder, cumin, salt, and pepper. Stir over medium heat until heated through.
  3. Once the rice is cooked, fluff with a fork and serve as the base of the bowl.
  4. Top the rice with the chicken and corn mixture.
  5. Sprinkle cotija cheese and fresh cilantro on top before serving.
