Instructions

  1. In a bowl, mix apple cider, soy sauce, Dijon mustard, garlic powder, black pepper, and salt. Marinate the chicken in the mixture for at least 30 minutes.
  2. Preheat the oven to 375°F (190°C) and place the marinated chicken thighs in a baking dish.
  3. Bake for 25-30 minutes until the chicken is cooked through.
  4. In a separate bowl, combine shredded cabbage, grated carrots, apple cider vinegar, and honey to create the slaw.
  5. Serve the baked chicken topped with autumn slaw.
