  • 2 pounds red potatoes
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices turkey bacon, cooked and crumbled
  • 1/2 cup chopped green onions
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Boil the potatoes until tender, about 15-20 minutes.
  2. In a large bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
  3. Drain the potatoes and let them cool before cutting them into cubes.
  4. Add the potatoes to the bowl and mix until coated.
  5. Fold in crumbled turkey bacon, green onions, and cheddar cheese.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • This potato salad can be made a day in advance for better flavor.
