Spaghetti Squash Carbonara

Delight in this healthy twist on Carbonara featuring spaghetti squash, turkey bacon, and chicken ham for a delicious and guilt-free meal.

  • 1 medium spaghetti squash
  • 4 ounces turkey bacon
  • 4 ounces chicken ham
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Drizzle with olive oil, season with salt and pepper, then place cut side down on a baking sheet.
  4. Bake for 30-40 minutes, until tender.
  5. While the squash is baking, cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop into pieces.
  6. In the same skillet, sauté garlic until fragrant.
  7. In a bowl, whisk together eggs and Parmesan cheese.
  8. Once the squash is done, scrape the insides with a fork to create spaghetti-like strands.
  9. Add the spaghetti squash to the skillet with garlic, remove from heat, and mix in the egg mixture quickly to create a creamy sauce.
  10. Fold in the turkey bacon and chicken ham, season with additional salt and pepper, and garnish with parsley.

Notes

  • For a vegetarian option, you can omit the meat and add more vegetables.
  • Make sure to mix the eggs off the heat to avoid scrambling.
