  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp additional ground cinnamon for frosting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them apart.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Allow cookies to cool.
  8. For the frosting, mix powdered sugar, milk, and ground cinnamon in a small bowl until smooth. Frost cooled cookies.
