Slow-Braised Beef Roast with Cranberry Balsamic Glaze

A succulent slow-braised beef roast glazed with a delightful cranberry balsamic reduction.

Ingredients

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon rosemary
  • 1/2 teaspoon thyme

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large pot, heat olive oil over medium heat and sear the beef roast on all sides until browned.
  3. Remove the roast and add onion and garlic, sautéing until softened.
  4. Return the roast to the pot and add cranberry juice, balsamic vinegar, salt, pepper, rosemary, and thyme.
  5. Cover and transfer to the oven, cooking for 3-4 hours until tender.
  6. Let the beef rest before slicing and serve with the glaze.

Notes

  • For extra flavor, marinate the beef in the cranberry glaze overnight.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
