  • 1 butternut squash, peeled and cubed
  • 1 pound steak, cut into strips
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 cups cooked quinoa

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the butternut squash cubes with olive oil, garlic, thyme, salt, pepper, and red pepper flakes until evenly coated.
  3. Spread the butternut squash on a baking sheet and roast for 25-30 minutes until tender and golden.
  4. While the squash is roasting, heat a skillet over medium-high heat and cook the steak strips until browned and cooked to your liking.
  5. Serve the cooked steak over a bed of quinoa and top with the roasted butternut squash.
