  • 1 pound baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Begin by boiling water in a large pot. Add the baby potatoes and cook until tender, about 15 minutes.
  2. While the potatoes are cooking, bring a separate pot of water to a boil and blanch the green beans for 3-4 minutes, then transfer to ice water.
  3. In a skillet, cook the turkey bacon until crispy, then crumble it.
  4. In a small bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
  5. Once the potatoes are cooked and cooled, chop them into bite-sized pieces.
  6. In a large bowl, combine the potatoes, green beans, crumbled turkey bacon, and dressing. Toss to combine.
