  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, beat together the pumpkin puree, cream cheese, vegetable oil, and sugars until smooth.
  3. Add in the eggs and vanilla extract and mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fill the muffin cups about 3/4 full and bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
