  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a greased baking dish.
  4. In a separate bowl, beat together granulated sugar and cream cheese until smooth.
  5. Add pumpkin puree, eggs, vanilla, and spices and mix until fully combined.
  6. Pour the cream cheese mixture over the crust.
  7. Bake for 30-35 minutes or until set.
  8. Allow to cool before cutting into bars.

Notes

  • Store in the refrigerator for up to a week.
