  • 1 cup sugar
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix pumpkin puree, sugar, brown sugar, and vegetable oil until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
  7. Let the bread cool completely before frosting it with cream cheese frosting.
  8. For the frosting, mix softened cream cheese and powdered sugar until smooth, then spread over the cooled pumpkin bread.
