  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups canned peaches, sliced
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, followed by the vanilla extract.
  4. Fold in the sliced peaches and cinnamon.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Bake for 45-50 minutes, until the center is set.
  7. Allow to cool before refrigerating for at least 4 hours.
