  • 3 large eggs
  • 2 cups fresh peaches, sliced
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and granulated sugar until smooth. Add vanilla extract and mix well.
  4. Add eggs one at a time, mixing until just combined.
  5. Pour cream cheese mixture over the crust in the springform pan.
  6. In another bowl, combine sliced peaches, cinnamon, brown sugar, and cornstarch. Gently fold into the cheesecake mixture.
  7. Bake for 50-60 minutes, or until the center is set and slightly jiggles.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, substitute brown sugar for granulated sugar in the filling.
