  • 2 cups blueberries
  • 8 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 8 slices turkey bacon

Instructions

  1. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, and ground cinnamon.
  2. Cube the French bread into bite-sized pieces and fold into the egg mixture.
  3. Add the blueberries and stir gently to combine.
  4. Transfer the mixture to a greased baking dish and cover with plastic wrap. Refrigerate overnight.
  5. The next morning, preheat the oven to 350°F (175°C).
  6. Cook the turkey bacon in a skillet until crispy, then chop and sprinkle over the casserole.
  7. Bake the casserole for 45-50 minutes until set and golden brown.
  8. Serve warm, garnished with extra blueberries if desired.

Notes

  • Feel free to use frozen blueberries if fresh ones are not available.
