My Mom’s Old-Fashioned Vegetable Beef Soup

Ingredients

  • 1 pound beef stew meat
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 potatoes, cubed
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the beef and brown on all sides.
  3. Stir in the onion, carrots, and celery; cook until veggies are softened.
  4. Add the potatoes, diced tomatoes, beef broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  6. In the last 10 minutes, stir in the peas.
  7. Serve hot.

Notes

  • This soup is even better the next day.
