  • 1 pound turkey bacon
  • 4 cups diced potatoes
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 6 eggs
  • 1 cup shredded cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Layer the diced potatoes at the bottom of the crock pot.
  2. Add the turkey bacon on top of the potatoes.
  3. Sprinkle bell peppers and onions over the bacon.
  4. Beat the eggs and pour them over the mixture in the crock pot.
  5. Top with cheese, salt, and pepper.
  6. Cook on low for 6-8 hours or until the eggs are set.
