Mexican Beef & Rice Skillet

A delicious and hearty dish that combines beef, rice, and flavorful spices for a satisfying meal.

  • 1 pound ground beef
  • 1 cup white rice
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup corn (frozen or canned)
  • 1/2 cup black beans (canned, drained)
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and cook until translucent.
  3. Stir in the garlic powder, cumin, chili powder, salt, and black pepper.
  4. Add the rice, beef broth, diced tomatoes, corn, and black beans.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
  6. If using, sprinkle shredded cheese on top and let it melt before serving.

Notes

  • This dish can easily be made in advance and reheated for quick meals.
  • Substitute ground turkey for a leaner option.
