  • 4 fillets cod
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the cherry tomatoes, olives, garlic, oregano, lemon juice, olive oil, salt, and pepper.
  3. Place the cod fillets on top of the vegetable mixture.
  4. Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
  5. Serve warm with a sprinkle of fresh herbs if desired.
