Loaded Bacon and Egg Hash Brown Muffins

These Loaded Turkey Bacon and Egg Hash Brown Muffins are perfect for a quick breakfast!

Ingredients

  • 2 cups hash browns
  • 6 slices turkey bacon
  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then chop into small pieces.
  3. In a bowl, mix the hash browns with half of the cheese and press into a muffin tin.
  4. Whisk the eggs and add the bacon, remaining cheese, and green onions.
  5. Pour the egg mixture into the muffin tin over the hash browns.
  6. Bake in the oven for 25-30 minutes, or until the eggs are set.

Notes

  • These muffins can be made ahead of time for meal prep.
  • Store leftover muffins in the fridge for up to 3 days.
