Loaded Bacon And Egg Hash Brown Muffins

A delicious and hearty breakfast recipe that combines hash browns, bacon, and eggs in a convenient muffin form.

  • 2 cups hash browns
  • 4 slices turkey bacon
  • 4 eggs
  • 1 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray.
  3. In a bowl, mix the hash browns with salt and pepper and press into the bottom of each muffin cup.
  4. Cook the turkey bacon in a skillet until crispy, then chop and distribute among the muffin cups.
  5. Whisk eggs in a separate bowl and pour over the bacon and hash browns.
  6. Top each muffin with shredded cheese and diced bell peppers.
