  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 cup powdered sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add in the eggs, lemon juice, vanilla extract, and lemon zest; mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Form the dough into balls and roll in powdered sugar.
  8. Place on the prepared baking sheet and bake for 10-12 minutes.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra lemon flavor, you can add more lemon zest.
  • Make sure not to overbake so the cookies stay chewy!
