  • ½ cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • ½ cup sour cream
  • 2 large eggs
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a greased 9×9 inch baking pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, lemon juice, and lemon zest; mix until combined.
  4. Pour the cream cheese mixture over the crust and spread evenly.
  5. Bake for 30-35 minutes, or until the edges are set but the center is slightly jiggly.
  6. Allow to cool completely, then refrigerate for at least 2 hours before cutting into squares.
