Ingredients

  • 2 cucumbers
  • 1 tablespoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 garlic clove, minced
  • 1 tablespoon sesame oil
  • 1 green onion, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Thinly slice the cucumbers and place them in a bowl.
  2. Sprinkle with salt and let them sit for 15 minutes.
  3. In a separate bowl, mix rice vinegar, sugar, minced garlic, and sesame oil.
  4. After 15 minutes, drain excess water from cucumbers.
  5. Add the vinegar mixture to the cucumbers and toss well.
  6. Garnish with green onions and sesame seeds before serving.

Notes

  • For a spicier version, add red pepper flakes.
