Korean Cucumber Salad

A light and refreshing Korean cucumber salad perfect for summer meals.

Ingredients

  • 2 large cucumbers
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped

Instructions

  1. Thinly slice the cucumbers and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  2. In a bowl, mix rice vinegar, sesame oil, sugar, and garlic.
  3. After 10 minutes, rinse the cucumbers under cold water and drain well.
  4. Toss the cucumbers with the dressing and add sesame seeds and green onions.
  5. Serve immediately or chill in the refrigerator for 30 minutes.

Notes

  • Adjust the amount of garlic according to preference.
  • For an extra kick, add a dash of chili flakes.
