High-Protein Chicken Ranch Quesadilla : Crispy, Creamy & Low-Carb

Enjoy a tasty twist on a classic with this High-Protein Chicken Ranch Quesadilla that’s both crispy and creamy while being low-carb.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup ranch dressing
  • 1 cup shredded cheese
  • 4 low-carb tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, mix the shredded chicken with ranch dressing, garlic powder, onion powder, and black pepper.
  2. Heat a skillet over medium heat and add olive oil.
  3. Place a tortilla in the skillet, and layer half of the chicken mixture and half of the cheese on one side.
  4. Fold the tortilla over and cook until golden brown, about 3-4 minutes on each side.
  5. Repeat with remaining tortillas and filling.
  6. Slice and serve immediately.

Notes

  • For extra flavor, add chopped green onions or jalapeños.
  • These quesadillas can be made ahead and reheated.
