High Protein Broccoli Cheddar Soup

Ingredients

  • 4 cups broccoli florets
  • 2 cups chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced turkey bacon
  • 1 cup heavy cream
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Sauté the diced turkey bacon in a large pot until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic; cook until softened.
  3. Add broccoli florets and chicken broth. Bring to a boil and simmer until broccoli is tender.
  4. Puree the soup until smooth. Return to heat and stir in heavy cream and cheese until melted.
  5. Serve topped with crispy turkey bacon.

Notes

  • This soup can be made ahead of time and reheated.
  • Feel free to add other vegetables if desired.
