High Protein Broccoli Cheddar Soup

A creamy and delicious high protein broccoli cheddar soup made with turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy. Remove and crumble.
  3. In the same pot, add the onion and garlic, cooking until the onion is translucent.
  4. Add the broccoli and chicken broth; bring to a boil.
  5. Reduce heat and simmer until broccoli is tender.
  6. Using an immersion blender, puree the soup until smooth.
  7. Stir in the cheddar cheese, milk, salt, pepper, and red pepper flakes until cheese is melted.
  8. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For extra creaminess, you can add a dollop of sour cream on top.
  • This soup can be made in advance and reheats well.
