Hearty Cheddar Garlic Herb Potato Soup Recipe

A delicious and creamy potato soup loaded with cheddar cheese, garlic, and herbs, all topped with crispy turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup cheddar cheese, shredded
  • 1 cup turkey bacon, cooked and crumbled
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, sautéing until translucent.
  3. Add diced potatoes and chicken broth, bringing to a boil. Reduce heat and simmer until potatoes are tender.
  4. Stir in heavy cream, cheddar cheese, thyme, salt, and pepper. Cook until cheese is melted.
  5. Top with crumbled turkey bacon before serving.

Notes

  • This soup can be made ahead of time and reheated for serving.
  • For a thicker soup, blend a portion of it before adding the cream and cheese.
