Hearty Cheddar Garlic Herb Potato Soup Recipe

This creamy potato soup combines richness with the savory flavors of cheddar cheese and turkey bacon.

  • 4 medium potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 3 slices turkey bacon, cooked and crumbled
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Sauté onion and garlic in the bacon drippings until translucent.
  3. Add potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
  4. Blend soup until smooth, then stir in heavy cream, cheddar cheese, thyme, parsley, salt, and pepper.
  5. Simmer for an additional 5 minutes and serve topped with crumbled bacon.
