- 2 boneless, skinless chicken breasts
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup fresh spinach
- 1 zucchini, sliced
- 1 red bell pepper, diced
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a bowl, mix breadcrumbs, Parmesan, Italian seasoning, salt, and pepper.
- Dip chicken breasts in olive oil, then coat with the breadcrumb mixture.
- Place on a baking sheet and bake for 20 minutes.
- Add sliced zucchini and diced bell pepper around the chicken.
- Pour marinara sauce over the chicken and top with spinach.
- Bake for an additional 10-15 minutes until chicken is cooked through.
