Healthy Chicken Parmesan with Vegetables

Enjoy a lightened-up version of the classic Chicken Parmesan, packed with healthy vegetables and delicious flavors.

  • 2 boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup fresh spinach
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, Parmesan, Italian seasoning, salt, and pepper.
  3. Dip chicken breasts in olive oil, then coat with the breadcrumb mixture.
  4. Place on a baking sheet and bake for 20 minutes.
  5. Add sliced zucchini and diced bell pepper around the chicken.
  6. Pour marinara sauce over the chicken and top with spinach.
  7. Bake for an additional 10-15 minutes until chicken is cooked through.
