  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the potatoes, then slice them thinly, making sure not to cut all the way through.
  3. In a bowl, mix olive oil, garlic powder, salt, and pepper.
  4. Brush the potato mixture over the potatoes, ensuring it seeps into the slices.
  5. Wrap turkey bacon around the potatoes, tucking the ends in.
  6. Place the potatoes on a baking sheet and bake for 40-45 minutes, until golden and crispy.
  7. Sprinkle with cheese if using and bake for an additional 5 minutes.
