Green Chile Chicken Enchilada Casserole

A delicious and comforting casserole featuring layers of chicken, green chiles, and cheese.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) green enchilada sauce
  • 1 can (4 oz) diced green chiles
  • 2 cups shredded cheddar cheese
  • 12 corn tortillas
  • 1 cup sour cream
  • 1 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, green enchilada sauce, diced green chiles, cumin, and garlic powder.
  3. Spread a thin layer of the chicken mixture in the bottom of a greased casserole dish.
  4. Layer with corn tortillas and half of the cheese. Repeat layers, finishing with tortillas on top.
  5. Spread sour cream over the top layer of tortillas, then sprinkle with remaining cheese.
  6. Bake for 25-30 minutes until cheese is bubbly and golden.

Notes

  • For extra flavor, add sliced olives or diced onions.
  • This casserole can be prepared ahead of time and baked just before serving.
