- 2 cups cooked shredded chicken
- 1 can (10 oz) green enchilada sauce
- 1 can (4 oz) diced green chiles
- 2 cups shredded cheddar cheese
- 12 corn tortillas
- 1 cup sour cream
- 1 tsp cumin
- 1 tsp garlic powder
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine cooked chicken, green enchilada sauce, diced green chiles, cumin, and garlic powder.
- Spread a thin layer of the chicken mixture in the bottom of a greased casserole dish.
- Layer with corn tortillas and half of the cheese. Repeat layers, finishing with tortillas on top.
- Spread sour cream over the top layer of tortillas, then sprinkle with remaining cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden.
Notes
- For extra flavor, add sliced olives or diced onions.
