Garlic Herb Roasted Potatoes, Carrots, and Zucchini

  • 2 cups baby potatoes
  • 1 cup carrots, sliced
  • 1 cup zucchini, chopped
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine potatoes, carrots, and zucchini.
  3. Drizzle olive oil over the vegetables, then add garlic powder, thyme, rosemary, salt, and pepper.
  4. Toss until evenly coated.
  5. Spread the mixture on a baking sheet.
