Garlic Herb Roasted Potatoes, Carrots, and Zucchini

Ingredients

  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup zucchini, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix the diced potatoes, sliced carrots, and zucchini.
  3. Drizzle the olive oil over the vegetables, then add the garlic powder, thyme, rosemary, salt, and pepper. Toss to coat evenly.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, or until the vegetables are golden brown and tender, stirring halfway through.
