- 2 cups potatoes, diced
- 2 cups carrots, sliced
- 2 cups zucchini, chopped
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the potatoes, carrots, zucchini, and garlic.
- Drizzle with olive oil and sprinkle with oregano, thyme, salt, and pepper. Toss to coat.
