Garlic Herb Roasted Potatoes, Carrots, and Zucchini

A delicious and easy recipe for garlic herb roasted potatoes, carrots, and zucchini.

Ingredients

  • 2 cups potatoes, diced
  • 2 cups carrots, sliced
  • 2 cups zucchini, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the potatoes, carrots, zucchini, and garlic.
  3. Drizzle with olive oil and sprinkle with oregano, thyme, salt, and pepper. Toss to coat.
  4. Spread the vegetable mixture in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes, or until vegetables are tender and golden brown, stirring halfway through.
