Florida Orange Juice Pumpkin Bread with Streusel and Orange Glaze

  • 1 cup pumpkin puree
  • 1/2 cup Florida orange juice
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup streusel topping
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon orange zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the pumpkin puree, Florida orange juice, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined. Fold in the walnuts if using.
  5. Pour the batter into the prepared loaf pan and sprinkle the streusel topping evenly over the top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
  8. Mix powdered sugar and orange zest to make the glaze, then drizzle over the bread once it has cooled completely.

Notes

  • Store any leftovers in an airtight container at room temperature for up to 3 days.
  • If desired, freeze the bread for longer storage, wrapped tightly in plastic wrap and foil.
