  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup streusel topping
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the pumpkin puree, orange juice, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in walnuts if using.
  6. Pour the batter into the prepared loaf pan and sprinkle the streusel topping evenly over the top.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the bread cools, whisk together the powdered sugar and fresh orange juice to make the glaze.
  9. Once the bread is cool, drizzle the glaze over the top and serve.

Notes

  • For a richer flavor, try using freshly grated nutmeg.
