  • 2 tablespoons sesame oil
  • 2 green onions, chopped
  • 1 cup bok choy, chopped
  • 2 soft-boiled eggs (optional)

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add the ginger and garlic, sautéing until fragrant.
  2. Add the chicken thighs and cook until browned on both sides.
  3. Pour in the chicken broth, soy sauce, and chili paste, then bring to a simmer.
  4. Add the ramen noodles and cook them according to package instructions.
  5. Stir in the bok choy until wilted. Remove from heat.
  6. Serve the ramen in bowls, topped with soft-boiled eggs (if using) and garnished with chopped green onions.
