  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 eggs

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the rolled oats and milk and let it sit for about 10 minutes.
  3. In a separate bowl, whisk together the brown sugar, vegetable oil, eggs, and vanilla extract.
  4. Add the oat mixture to the wet ingredients and mix well.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  7. Fold in the chocolate chips.
  8. Divide the batter among the muffin cups, filling each about 2/3 full.
  9. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  10. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
