Easy Ground Beef Enchiladas

Try these easy ground beef enchiladas for a quick family meal that everyone will love!

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 cup salsa
  • 2 cups shredded cheese
  • 8 flour tortillas
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 tablespoon taco seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook ground beef and onions over medium heat until beef is browned.
  3. Stir in salsa, taco seasoning, black beans, and corn. Cook for another 5 minutes.
  4. Place a tortilla on a plate, add a scoop of the beef mixture, and sprinkle with cheese. Roll up and place seam side down in a baking dish.
  5. Repeat for all tortillas. Top with remaining salsa and cheese.
  6. Bake in preheated oven for 20-25 minutes until cheese is melted and bubbly.

Notes

  • Serve with sour cream and guacamole.
  • These can be made ahead and frozen for later.
