Double Layer Vegan Brookies

  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 cup almond flour (for cookie layer)
  • 1/2 cup coconut sugar (for cookie layer)
  • 1/4 cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut sugar, cocoa powder, baking soda, and salt for the brownie layer.
  3. Add melted coconut oil, almond milk, and vanilla extract. Mix well.
  4. Spread the brownie mixture in a greased baking pan.
  5. In another bowl, mix almond flour, coconut sugar, and chocolate chips for the cookie layer.
  6. Spread the cookie layer on top of the brownie layer.
  7. Bake for 25-30 minutes until both layers are set.
  8. Let cool before cutting into squares.

Notes

  • For a deeper chocolate flavor, add more cocoa powder.
  • Adjust the sweetness by adding more coconut sugar if desired.
