  • 6 slices turkey bacon
  • 4 eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 45 minutes until tender.
  3. Cook the turkey bacon in a skillet until crispy, then chop into pieces.
  4. Once potatoes are done, let them cool slightly, then slice them in half and scoop out the insides, leaving a small border of potato.
  5. Mix the scooped potato with eggs, cheese, green onions, turkey bacon, olive oil, salt, and pepper.
  6. Fill the potato skins with the mixture and return to the oven for an additional 15-20 minutes, or until the tops are golden.
