Crockpot Creamy Tomato Tortellini Soup

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (9 ounces) tortellini
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a crockpot, heat olive oil and sauté the onion and garlic until soft.
  2. Add vegetable broth, crushed tomatoes, basil, oregano, salt, and pepper; stir to combine.
  3. Cover and cook on low for 4-6 hours.
  4. About 30 minutes before serving, stir in tortellini and cook until tender.
  5. Stir in the heavy cream, spinach, and Parmesan cheese before serving.
