- 1 pound chicken thighs, boneless and skinless
- 1 pound smoked sausage, sliced
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 tablespoons Cajun seasoning
- 1 bay leaf
- 1 cup okra, sliced (optional)
- Salt and pepper to taste
- 2 cups cooked rice for serving
- In a large crockpot, combine the chicken thighs, sliced sausage, diced onion, bell pepper, celery, garlic, and diced tomatoes.
- Pour in the chicken broth and add the Cajun seasoning and bay leaf. Stir to combine.
- Cover and cook on low for 6-8 hours or until the chicken is cooked through and tender.
- About 30 minutes before serving, add the sliced okra if using.
- Remove the bay leaf and shred the chicken before serving.
- Serve over cooked rice and enjoy!
