Crockpot Chicken and Sausage Gumbo

  • 1 pound chicken thighs, boneless and skinless
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 bay leaf
  • 1 cup okra, sliced (optional)
  • Salt and pepper to taste
  • 2 cups cooked rice for serving

Instructions

  1. In a large crockpot, combine the chicken thighs, sliced sausage, diced onion, bell pepper, celery, garlic, and diced tomatoes.
  2. Pour in the chicken broth and add the Cajun seasoning and bay leaf. Stir to combine.
  3. Cover and cook on low for 6-8 hours or until the chicken is cooked through and tender.
  4. About 30 minutes before serving, add the sliced okra if using.
  5. Remove the bay leaf and shred the chicken before serving.
  6. Serve over cooked rice and enjoy!

Notes

  • For a spicier gumbo, add more Cajun seasoning or hot sauce.
  • This gumbo can be made a day ahead and reheated for dinner.
