Crockpot Cheeseburger Soup

A hearty and comforting Crockpot cheeseburger soup made with turkey and bacon, perfect for chilly days.

Ingredients

  • 1 pound ground turkey
  • 4 strips turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove from the skillet and chop.
  2. In the same skillet, brown the ground turkey. Add onion and garlic, cooking until the onion is translucent.
  3. In a crockpot, combine the cooked turkey, bacon, broth, potatoes, Worcestershire sauce, thyme, salt, and pepper.
  4. Cook on low for 6-8 hours or until potatoes are tender.
  5. Stir in the milk and cheddar cheese until melted before serving.

Notes

  • For a thicker soup, you can mash some of the potatoes after they are cooked.
  • Add more cheese for an extra cheesy flavor.
