- 3 pounds chuck roast
- 2 tablespoons olive oil
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
- 8 ounces provolone cheese, sliced
- Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned.
- Remove the roast and set aside. In the same skillet, add sliced onions and sauté until softened.
- Add minced garlic and cook for another minute.
- Transfer the roast to the crock pot and layer with the sautéed onions and garlic, then pour in beef broth and Worcestershire sauce.
- Sprinkle thyme, salt, and pepper on top.
- Cover and cook on low for 8-10 hours or until the meat is tender.
- In the last 30 minutes of cooking, add the provolone cheese on top and let it melt.
- Serve hot with bread or over mashed potatoes.
